Ingredients

  • 1 can (10-1/2 ounces) condensed cream of celery soup
  • 1 can (5-6 ounces) tuna, drained and flaked
  • 1 Tablespoons onion, chopped
  • 1 teaspoon lemon juice
  • 4 slices whole wheat bread (toasted if desired)
  • Lettuce, leaves (optional)
  • Tomatoes, sliced (optional)
  • Avocado, sliced (optional)

Instructions

  1. In a medium bowl, combine 1/4 cup of soup*, tuna, onion and lemon juice.
  2. Spread on 2 slices of bread
  3. Top with lettuce, tomatoes and avocado, if desired.
  4. *Save, refrigerate and use remaining soup in another recipe.

Notes

Serve with your favorite soup. Garnish with chips, pickles, olives, raw vegetables.

Ingredients

  • 1/4 cup celery, chopped
  • 1/4 cup onion, chopped
  • 1 Tablespoon parsley, chopped
  • 1 teaspoon oregano, crushed
  • 1 small clove garlic, minced
  • 1 Tablespoon olive oil
  • 1 can (10-3/4 ounces) Condensed Tomato Soup
  • 1 soup can water
  • 1 can (16-20 ounces) kidney beans, drained
  • 1/2 cup cooked elbow macaroni
  • 1/2 teaspoon lemon juice
  • Grated Parmesan Cheese (optional)

Instructions

  1. Add oil to a large saucepan over medium heat.
  2. Add celery, onion, parsley, oregano and garlic to oil and cook until vegetables are tender.
  3. Add remaining ingredients
  4. Heat; stir now and then.
  5. Ladle into soup bowls or large mugs.
  6. Garnish with grated Parmesan cheese if desired.

Notes

Serve with crusty Italian bread or soft breadsticks.

  • 1/2 cup applesauce
  • 1/8 teaspoon salt
  • 1/2 teaspoon Cinnamon
  • 1/8 teaspoon Nutmeg (if desired)
  • 1 package (4-servings) Instant Pudding - Vanilla flavor

Instructions

  1. Combine milk, applesauce, salt, and spices in a bowl
  2. Add pudding mix
  3. Beat slowly with electric mixer on low speed until well blended, about 2 minutes
