Ingredients

  • 1 can (10-3/4 ounces) Condensed Cream of Mushroom Soup
  • 1/2 cup Evaporated Milk
  • 1-1/2 teaspoons prepared horseradish (optional)
  • 1/2 cup grated Parmesan cheese
  • 1 to 1-1/2 cups cubed cooked Ham
  • 1/2 cup stuffed green olives, sliced (optional)
  • 1 can (4 ounces) sliced Mushrooms, drained
  • 1/4 cup dry white wine (optional)
  • 1 package (5 ounces dry) Spaghetti (or other pasta)
  • 2 tablespoons butter, melted

Instructions

  1. Combine all ingredients except spaghetti and butter in Slow Cooker; stir well.
  2. Cover and cook on Low setting for 6 to 8 hours.
  3. Just before serving, cook spaghetti according to package directions.
  4. Drain and toss with butter.
  5. Stir into Slow Cooker.
  6. Sprinkle with additional grated cheese if desired.

Notes

Serve with a green salad and light dessert.

  • 2 cloves garlic, minced
  • 1 can (4 ounces) sliced mushrooms, drained
  • 2 teaspoons salt
  • 1/2 teaspoon nutmeg (optional)
  • 1/2 teaspoon leaf oregano (or Italian seasonings)
  • 1/2 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
  • 3 tablespoons flour
  • 6 eggs, beaten
  • 3/4 cup milk, scalded
  • 1/2 cup grated Cheddar cheese

Instructions

  1. In a skillet, over medium-high heat, lightly brown ground beef and onion in oil (or butter); drain well.
  2. Place in well-greased slow cooker.
  3. Stir in remaining ingredients except eggs, milk and cheese; blending well.
  4. In a separate bowl, beat eggs and milk together.
  5. Pour over ingredients in slow cooker.
  6. Cover and cook on Low setting for 7 to 9 hours or until firm.
  7. Sprinkle with grated cheese just before serving.

    Sauce
  • 1 can (14-1/2 ounces) whole tomatoes
  • 1 small onion, cut into pieces
  • 1 clove garlic, minced
  • 1/2 teaspoon ground red pepper
  • 1/2 teaspoon salt
  • 1 can (6 ounces) tomato paste
  • Casserole
  • 1 pound ground beef, browned
  • 2 cups (8 ounces) shredded Cheddar cheese
  • 9 corn tortillas
  • Optional Toppings
  • Shredded lettuce
  • Fresh tomatoes, diced
  • Sour Cream
  • Black olives, sliced

Instructions

    Sauce
  1. Blend tomatoes and liquid with onion and garlic in a blender or food processor (or mash up really well in a bowl).
  2. Pour into medium saucepan.
  3. Add red pepper, salt and tomato paste.
  4. Heast to a boil; then simmer for 5 to 10 minutes.
  5. Casserole
  6. Place 3 tortillas in bottom of slow-cooker.
  7. Layer on top of tortillas 1/3 of the ground beef; 1/3 of the tomato sauce; and 1/3 of the Cheddar cheese.
  8. Repeat each layer 2 more times.
  9. Cover and cook on Low setting 6 to 8 hours.

  • 4 carrots, peeled and sliced into 1/2-inch rounds
  • 3 large potatoes, peeled and diced
  • 1 medium onion, sliced
  • 2 tablespoons cornstarch

Instructions

  1. In a large bowl, combine ground beef, chopped onion, egg, bread crumbs, salt and pepper.
  2. Shape mixture into about 24 meatballs.
  3. In a large skillet over medium heat, melt butter.
  4. Gently add meatballs and brown all sides.
  5. Drain well.
  6. In a medium bowl, stir together tomatoes (with liquid), water, beef granules and seasonings.
  7. Place carrots, potatoes and sliced onion in bottom of slow-cooker.
