Ingredients

  • 2 Eggs
  • 2/3 cup Vegetable Oil
  • 1-1/3 cups Sugar
  • 1-1/2 cups grated peeled Zucchini
  • 2 teaspoons Vanilla
  • 2 cups Flour
  • 1/4 teaspoon Salt
  • 1/2 teaspoon Baking Powder
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg (if desired)
  • 1/2 to 1 cup chopped Nuts (if desired)

Instructions

  1. In a large bowl, with electric mixer, beat eggs until light and foamy.
  2. Add oil, sugar, zucchini and vanilla; mix well.
  3. Stir dry ingredients together with nuts and add to zucchini mixture; mix well.
  4. Pour into a greased and floured baking pan that fits inside your Slow Cooker.
  5. Cover with aluminum foil and place into Slow Cooker.
  6. Cover and bake on High setting for 3 to 4 hours or until done. Do not check or remove cover until last hour of baking.
  7. Check for doneness with wooden pick - insert pick into center of pan; if it comes out "clean" it's done.
  8. Remove pan and uncover.
  9. Let stand 5 minutes.
  10. Unmold onto a cake rack; let cool.
  11. To store, wrap in aluminum foil and refrigerate.

Ingredients

  • 6 medium Potatoes, peeled and sliced thin
  • 1 large Onion, sliced thin
  • Cooking Oil
  • 8 ounces shredded Mozzarella Cheese
  • 2 ounces sliced Pepperoni
  • 1 teaspoon Salt
  • 1 can (approx. 8 ounces) Pizza Sauce

Instructions

  1. In a skillet over medium heat, saute potato and onion slices in oil until onion begins to appear transparent; stir constantly to prevent browning.
  2. Drain well.
  3. In Slow Cooker, combine potatoes and onions with cheese, pepperoni and salt.
  4. Pour pizza sauce over top.
  5. Cover and cook on Low setting for 6 to 10 hours.

Notes

Serve with Italian sausage, green salad and a light dessert.

  • 2 packages (approx. 10 ounces each) frozen chopped Broccoli
  • 1 can (10-3/4 ounces) conbdensed Cream of Celery soup
  • 1-1/4 cups shredded sharp Cheddar Cheese
  • 1/4 cup minced Green Onion
  • 1 cup crushed Saltine Crackers (or potato chips)

Instructions

  1. In large bowl, combine broccoli, soup, 1 cup shredded cheese and onion.
  2. Pour into lightly greased Slow Cooker.
  3. Sprinkle top with crushed crackers, then with remaining cheese.
  4. Cover and cook on Low setting for 5 to 6 hours (or on High setting 2 to 4 hours).

Notes

Serve with meat of choice and dessert.

If desired, 5 to 10 minutes before serving, spoon casserole into a greased baking dish. Sprinkle with additional shredded cheese and crushed potato chips. Bake 5 to 10 minutes in a 400F oven.

  • 2 smoked ham hocks

  • 2 stalks celery, sliced
  • 1 large carrot, pared and sliced

Instructions

  1. Soak lentils to soften according to package directions.
  2. When lentils have softened, drain well.

  • 1 pound Ground Beef
  • 1/2 teaspoon Seasoned Salt
  • 1/4 teaspoon Leaf Oregano
  • 1/4 teaspoon Leaf Basil
  • 1 envelope (1-1/2 ounces) Dry Onion Soup Mix
  • 6 cups boiling Water
  • 1 can (16 ounces approx.) Whole Tomatoes
  • 1 Tablespoon Soy Sauce
  • 1 cup sliced Celery
  • 1/4 cup chopped Celery Leaves
  • 1 cup sliced pared Carrots
  • 1 cup uncooked Elbow Macaroni (or other similar pasta)
  • Grated Parmesan Cheese (optional)

Instructions

  1. In a skillet, over medium heat, brown sausage and ground beef; drain well.
  2. Place meat into Slow-Cooker.
  3. Add salt, oregano, basil and onion soup mix.
  4. Stir in boiling water, tomatoes and soy sauce.
  5. Add celery, celery leaves and carrots; stir well.
  6. Cover and cook on Low setting for 8 to 16 hours (or on High setting for 4 to 5 hours).
  7. One hour before serving, turn to High setting andf stir in macaroni.
  8. Serve with Parmesan cheese if desired.

Notes
