Slow-Cooker Lentil Soup

Ingredients

  • 1 pound dried lentils
  • 2 smoked ham hocks
  • 1 large onion, chopped
  • 2 stalks celery, sliced
  • 1 large carrot, pared and sliced
  • 1 Tablespoon sugar (optional)
  • 1/4 teaspoon leaf Thyme
  • 4 cups Water

Instructions

  1. Soak lentils to soften according to package directions.
  2. When lentils have softened, drain well.
  3. Add all ingredients to Slow Cooker.
  4. Cover and cook on Low setting 8 to 14 hours (or on High setting for 4 to 6 hours).

Notes

Serve with crusty bread, a green salad and dessert.
