Ingredients

  • 1 pound loaf of French Bread, cut in half lengthwise
  • 1/2 pound Ground Beef
  • 1 medium Onion, sliced thin
  • 4 ounces fresh Mushrooms, sliced thin
  • 1/2 teaspoon dried minced Garlic
  • 1/4 teaspoon Black Pepper, ground
  • 1 cup jarred Spaghetti Sauce
  • 1/2 cup Mozzarella Cheese, shredded

Instructions

  1. In a large skillet, brown ground beef and drain well. Set aside.
  2. In same skillet, sauté onions and mushrooms with garlic and pepper.
  3. Stir in drained beef and spaghetti sauce.
  4. Heat until bubbly.
  5. Place bread halves on a broiler safe baking sheet.
  6. Top bread halves with meat mixture and top with cheese.
  7. Broil 6 inches under heat source for about 10 minutes or until cheese is bubbly and golden. Watch closely to prevent from burning.
  8. Remove from broiler.
  9. Slice and serve.

Notes

Serve with a green salad and a light dessert.

  • 4 Eggs
  • 1-1/2 cups Sugar
  • 1 Tablespoon Cinnamon
  • 1 Tablespoon Nutmeg
  • 1 Tablespoon Vanilla
  • 2 Tablespoons Butter, melted
  • 3 cups Milk
  • 6 cups Bread Cubes
  • 1/2 Raisins

Instructions

  1. Preheat oven to 375F.
  2. In a large mixing bowl, beat together first 7 ingredients until smooth.
  3. Spray an 11x7-inch baking pan with non-stick cooking spray.
  4. Layer bread cubes and raisins into the pan.
  5. Pour egg mixture over bread.
  6. Bake for 40 minutes or until set.

  • 1/2 cup Milk
  • 1 teaspoon Vanilla Extract

  • 1/4 cup Grape Jelly
  • 8 slices Bread

Instructions

  1. In a shallow bowl, combine milk and Vanilla.
  2. Add egg; mix well to combine.
  3. Spread 1 Tablespoon peanut butter and 1 Tablespoon jelly over the tops of 4 slices of bread.
  4. Top each with another slice of bread.
  5. Dip each sandwich into egg mixture, coating both sides.
  6. Coat a griddle or large skillet with cooking spray or vegetable oil and heat over medium heat.
  7. Place sandwiches onto hot griddle; brown on both sides.

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 egg
  • 1 cup dry bread crumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons butter
  • 1 can (16 ounces) whole tomatoes, undrained, chopped loosely
  • 1 cup water
  • 2 tablespoons beef bouillon granules
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 2 teaspoons Italian seasoning
  • 4 carrots, peeled and sliced into 1/2-inch rounds
  • 3 large potatoes, peeled and diced
  • 1 medium onion, sliced
  • 2 tablespoons cornstarch
  • 1/4 cup cold water

Instructions

  1. In a large bowl, combine ground beef, chopped onion, egg, bread crumbs, salt and pepper.
  2. Shape mixture into about 24 meatballs.
  3. In a large skillet over medium heat, melt butter.
  4. Gently add meatballs and brown all sides.
  5. Drain well.
  6. In a medium bowl, stir together tomatoes (with liquid), water, beef granules and seasonings.
  7. Place carrots, potatoes and sliced onion in bottom of slow-cooker.
  8. Top with meatballs.
  9. Pour tomato mixture over all.
  10. Cover and cook on Low setting for 8 to 10 hours.
  11. Before serving, remove meatballs with a slotted spoon.
  12. Make a smooth paste of the cornstarch and water.
  13. Stir into remaining ingredients in slow-cooker.
  14. Cover and cook on High setting for 10 minutes to thicken.
  15. Return meatballs to stew and serve.

Notes

Serve with a green salad, crusty bread and dessert if desired.
