Ingredients
- 1 pound loaf of French Bread, cut in half lengthwise
- 1/2 pound Ground Beef
- 1 medium Onion, sliced thin
- 4 ounces fresh Mushrooms, sliced thin
- 1/2 teaspoon dried minced Garlic
- 1/4 teaspoon Black Pepper, ground
- 1 cup jarred Spaghetti Sauce
- 1/2 cup Mozzarella Cheese, shredded
Instructions
- In a large skillet, brown ground beef and drain well. Set aside.
- In same skillet, sauté onions and mushrooms with garlic and pepper.
- Stir in drained beef and spaghetti sauce.
- Heat until bubbly.
- Place bread halves on a broiler safe baking sheet.
- Top bread halves with meat mixture and top with cheese.
- Broil 6 inches under heat source for about 10 minutes or until cheese is bubbly and golden. Watch closely to prevent from burning.
- Remove from broiler.
- Slice and serve.
Notes
Serve with a green salad and a light dessert.

Bread Pudding

Ingredients
- 4 Eggs
- 1-1/2 cups Sugar
- 1 Tablespoon Cinnamon
- 1 Tablespoon Nutmeg
- 1 Tablespoon Vanilla
- 2 Tablespoons Butter, melted
- 3 cups Milk
- 6 cups Bread Cubes
- 1/2 Raisins
Instructions
- Preheat oven to 375F.
- In a large mixing bowl, beat together first 7 ingredients until smooth.
- Spray an 11x7-inch baking pan with non-stick cooking spray.
- Layer bread cubes and raisins into the pan.
- Pour egg mixture over bread.
- Bake for 40 minutes or until set.
Notes
A delicious way to use up slightly stale bread.

Slow-Cooker Meatball Stew

Ingredients
- 1 pound ground beef
- 1 medium onion, chopped
- 1 egg
- 1 cup dry bread crumbs
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons butter
- 1 can (16 ounces) whole tomatoes, undrained, chopped loosely
- 1 cup water
- 2 tablespoons beef bouillon granules
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 2 teaspoons Italian seasoning
- 4 carrots, peeled and sliced into 1/2-inch rounds
- 3 large potatoes, peeled and diced
- 1 medium onion, sliced
- 2 tablespoons cornstarch
- 1/4 cup cold water
Instructions
- In a large bowl, combine ground beef, chopped onion, egg, bread crumbs, salt and pepper.
- Shape mixture into about 24 meatballs.
- In a large skillet over medium heat, melt butter.
- Gently add meatballs and brown all sides.
- Drain well.
- In a medium bowl, stir together tomatoes (with liquid), water, beef granules and seasonings.
- Place carrots, potatoes and sliced onion in bottom of slow-cooker.
- Top with meatballs.
- Pour tomato mixture over all.
- Cover and cook on Low setting for 8 to 10 hours.
- Before serving, remove meatballs with a slotted spoon.
- Make a smooth paste of the cornstarch and water.
- Stir into remaining ingredients in slow-cooker.
- Cover and cook on High setting for 10 minutes to thicken.
- Return meatballs to stew and serve.
Notes
Serve with a green salad, crusty bread and dessert if desired.
