Slow-Cooker Lentil Soup

Ingredients
- 1 pound dried lentils
- 2 smoked ham hocks
- 1 large onion, chopped
- 2 stalks celery, sliced
- 1 large carrot, pared and sliced
- 1 Tablespoon sugar (optional)
- 1/4 teaspoon leaf Thyme
- 4 cups Water
Instructions
- Soak lentils to soften according to package directions.
- When lentils have softened, drain well.
- Add all ingredients to Slow Cooker.
- Cover and cook on Low setting 8 to 14 hours (or on High setting for 4 to 6 hours).
Notes
Serve with crusty bread, a green salad and dessert.
