Bread Pudding

Ingredients
- 4 Eggs
- 1-1/2 cups Sugar
- 1 Tablespoon Cinnamon
- 1 Tablespoon Nutmeg
- 1 Tablespoon Vanilla
- 2 Tablespoons Butter, melted
- 3 cups Milk
- 6 cups Bread Cubes
- 1/2 Raisins
Instructions
- Preheat oven to 375F.
- In a large mixing bowl, beat together first 7 ingredients until smooth.
- Spray an 11x7-inch baking pan with non-stick cooking spray.
- Layer bread cubes and raisins into the pan.
- Pour egg mixture over bread.
- Bake for 40 minutes or until set.
Notes
A delicious way to use up slightly stale bread.

Soft Oatmeal Raisin Cookies

Ingredients
- 1 package (9 ounces) Yellow Cake Mix
- 1 cup quick-cooking Oatmeal
- 6 Tablespoons unsweetened Applesauce
- 1 Egg
- 2 Tablespoons Butter, melted
- 1/2 teaspoon Apple Pie Spice (or Cinnamon)
- 1/2 cup Raisins
Instructions
- In a mixing bowl, combine the first six ingredients; beat until blended
- Stir in raisins
- Drop by tablespoonfuls, 2 inches apart, onto greased baking sheets
- Bake at 375F for 10-12 minutes or until the edges are lightly browned
- Remove from oven and cool for 5 minutes on baking sheet
- Remove to wire rack to cool completely
Notes
The applesauce keeps the cookies soft and moist. Store leftovers in the refrigerator (if there are any)!
